Hello there, @JulianRunge ...
You can do this by using the course import tool...selecting only specific content. You'll want to be logged into the course where the rubrics will be imported (copied) into. During the import steps outlined in the Guide I'll link for you, you'll be choosing the course where the rubrics currently exist. I like to think of things like this... your "source" course is where all your content currently lives. Your "destination" course is where the content is going to. So, log in to your "destination" course, and select your "source" course during the steps in this Guide:
How do I select specific content as part of a course import?
You'll have the opportunity to select any of your rubrics that you want to import (copy) from one course to another.
