Why does the grade book show 100% for students that did not take to quiz?

Hi  @pamelaholder  - I have to assume you mean they are showing 100% in their Total column and not for the quiz, specifically.  If this is true, I am likewise assuming the quiz is showing - (dash) in the gradebook.  A dash is not the same as a zero; it counts neither for nor against the grade.  Canvas simply treats it as ungraded like any other published assignment you may have in that course.  I'm not sure if you are using classic quizzes or new quizzes, but it really does not matter in this case, as you will have to head in and give that student a 0. 

On the other hand, if the student who never went into the quiz got 100% for that quiz, then it may be time to contact support at your institution or Canvas support (Help>>Report a Problem), as that simply should not happen.  An untaken quiz should show a - (dash) in the gradebook, not 100%, most definitely.
