Is there any way to remove the grade average in an assignment? This feature seems like something that an instructor should choose to include, as it's not always beneficial for students to know the class average.

This can be removed for all assignments in a course, but not on a case-by-case basis for individual assignments. That is, you cannot show it on some assignments and hide it on others.
To remove it for all assignments, go to your course Settings page, scroll down and click on More Options. Then check the box to "Hide grade distribution graphs from students." Then scroll to the bottom again and Update the Course Details.
