The t in gradebook means the submission was a text entry.

There was another question on this topic on the forum recently. There is not a mention of the T in the instructor documentation for icons and colors as you stated.
However, it is in the student guide: icons and colors in grade book

Unfortunately the page that many people point to as a summary of the symbols doesn't contain the weird ones like the Rocket Ship or the big capital T.
Here's what I've found though--
X - I think is for eXcused
Rocket ships means it has been submitted but not graded
Big capital "T" is similar to the rocket ship in that it hasn't been graded but it is also a "text submission" (ex. something handed in on paper which the teacher hasn't graded yet.)
I don't yet know what the document icon stands for.
The "T" isn't included in the documentation you site.
