How do I create an organization in Canvas (announcements for my department)?

Hello  @rkolodny ‌, we do this a LOT, we just create a new course and then put only the staff in it.  We normally have the department chair or leader of the ORG be the "teacher" and then everyone else is a "student".  This has made some of the other features work smoother like group work and using quizzes for voting, stuff that happens in a normal organization and now happens via Canvas.
