Hi @sselke and welcome to the Community! This may be a question that is better answered by whoever serves as the copyright officer at your institution (often someone in the library/learning commons). In my experience, it is common for publishers to allow a small portion of texts to be provided to students. The question here really is about what is permitted by copyright and institutional policy rather than functionality within Canvas.
I know this isn't a direct answer, but even at my own institution when I get questions about what can/can't be posted to Canvas from published resources, I defer to the expertise of the copyright officer unless I know that the material is an open educational resource or has usage rights clearly indicated.
