I'm making a multiple fill-in quiz I want students to be able to enter whatever response they want, not one I enter as right. How do I do this in Canvas quizzes. Is there like a survey question in quizzes?

Would it work for you to make these questions "Essay" type questions? That way, you do not have to specify a "correct" answer, and Canvas will not automatically check to see if the answer is "correct" or not. You would need to manually review these responses and grade (if necessary). There isn't a "survey" type of question, but you could set up the entire quiz as a survey if you wanted. How do I create a survey in my course? Here are a couple Guides on Essay questions (depending on which version of Quizzes you are using):
