Hi gerry.pennington Welcome to the Canvas Community.  The online instructor's guide has great instructions on how to handle this situation here:  How do I assign an assignment to an individual student?  You can set a separate "display after" and due date just for one individual student this way, keeping the rest of the class on the original due date.  (The other class members will not be aware of this, either.)  Bear in mind that this will NOT work within Modules, however, as there is no good way to unlock a module for a specific student.   @James ‌ posted a work-around for this issue here: How to unlock modules for individual students .  You should also be sure (again, if it's a module) to vote "up" and comment on the Feature Idea that James links to:  https://community.canvaslms.com/ideas/5689-unlocking-modules-for-individual-students .
