Welcome to the Canvas Community. Thank you for posting your question. The short answer to your question is...you cannot. The Microsoft Immersive Reader is currently being offered as a trial feature, and it is only available for wiki Pages in your Canvas course...not for Discussions, Assignments, Quizzes, etc. See https://community.canvaslms.com/docs/DOC-17993-41521165733 for additional details.
