How do I create an online essay exam, an exam students complete online?

I use short answer questions, and case studies that involve answers of a paragraph or more. I want the student to be able to access the exam online only, no downloads. I want the students to enter answers after each question, and then to enter the entire exam. How do I do this?

I need this for exams to finish this semester and design for later.

Depending on the version of Quizzes that your school has enabled in your environment, you should be able to create short-answer questions in a quiz within Canvas.  I would first recommend that you watch these short tutorial videos:
