I want to exempt some students from assignments so it doesn't affect their grade

Hello  @rbrimfield  Welcome to the Canvas Community.  Thanks for posting your question.  Depending on how your course is set up, there are a few different options that you could use to only assign an assignment to specific students:

• How do I assign an assignment to a course group?
