Hi there,
I need to:
1) test how quizzes will look like to students
--> After I set the quizzes to allow multiple attempts but to see the answers only after the last attempt, I could not simulate the student view (i.e. actually see that I would have two attempts and that I would see the answers only after the second attempt)
2) view how the modules list will look like to students
--> The student view I could simulate only shows the interface with the already published modules and natigation options
How do I get to see a preview of what students will see **before** I publish the material?

@cberube , there isn't really a good way to preview content in student view before you publish the material. With quizzes, you can technically "preview" the quiz (in Instructor view) --> Click on the quiz and click "Preview." Otherwise, the idea of "student view" is that you are seeing the course as a real student sees it right now.
One thing that would kind of work, is using the Canvas test environment to test things before students see them. This way you could publish it in the Test enviornment, but studen'ts won't see it or be able to access it - What is the Canvas test environment?

Publish the material you wish to test, then unpublish after testing.
Because unpublished content is unavailable to students, it is also unavailable in Student View, which tells us that Student View is actually working as intended.
