If I assign a due date to a quiz, but do not fill in "available until", then will students still be able to do the quiz late and have it show up in the gradebook with a highlighted cell indicating late?

That is correct! I like to think of due dates as simply communication tools. It's the availability dates that control actual access to submit an assignment. The one thing I will add is that if you are using the New Gradebook and set up a late policy, that could affect the grade that shows up if it is submitted late.
