I have searched the Canvas Guide a couple of times but don't see this question asked/answered.
I have two courses with the same name but which are in different formats (one online, one hybrid). Thus, I don't combine them into a single course.
These two course often have assignments with similar names that are due at slightly different times in the semester (maybe a week apart). When I look at my instructor "to do" list, I can't tell which section's items need to be graded. I see the course name (say, "English 101") but not the section number. Thus, I am often having to double check to make sure I've graded a particular section's assignment.
If the section number and not just the course name were listed in the To Do List, it would make things easier.

This top section is written after I had finished the rest of the email. I went to test something and discovered that Canvas already allows you to do this. Just edit the course nickname.
This statement is buried in a lesson in the Canvas Instructor Guide: How do I use the To Do list and sidebar in the Dashboard as an instructor?
Course nicknames can be set in place of sidebar course codes that are long or otherwise confusing to remember which courses they represent. If you have created a nickname for a course, the nickname displays in the sidebar instead of the course code [2]. However, the original course code always displays in the course card.
Since I think the journey is more important than the destination, here's the thought process that is pretty much not needed since Canvas already does it.

Okay, after writing all this, it turns out that Canvas has already implemented option 6. Here's what my To Do list normally looks like
If I edit the dashboard course card for MATH 121 and create a nickname, then this is what I get
Score for Canvas! They already allow you to do what you want to do. Just edit the course nickname to add the section number.

Let me provide some background and then we'll see what can be done. While this may be something that Canvas can do, it might be easier to handle within your own institution.
The naming scheme is determined by your institution, not by Canvas.
Richland has chosen to make the short code be just the course number for a multitude of reasons. Some schools with a different student information system have a single numeric ID for a course. It means nothing to anyone except for the computer system, but some people put it in there. Richland has four values: course number, section number, session, and year, and we tried to combine those together in ways that worked best for the college.
Way back in 2012 when we were settings the standards for the naming we decided to use the course abbreviation "ENGL 101" for the course code. At that point, it was displayed inside a little box in small print and you didn't have much room to use a longer title, so the course prefix and number seemed appropriate. There really wasn't room to display both the course and section, and for those instructors that have multiple sections in different modalities (01,02,03) and (V1,V2), it would get really long. In addition, most students don't care what section they're in, they either want to know that it's "ENGL 101" or perhaps "Composition 1." Now the tiny box is gone and the code appears in the breadcrumb at the top. Breadcrumbs should still be short, but there is more room than in the tiny box.
We chose to make the title display the extra information, including the term and any sections when there was more than one of them for that teacher. Richland uses the course prefix, number, title, and term; it may also include a section number.
A teacher who was teaching just one section of ENGL 101 would see "ENGL 101 -- Composition 1 (FA19)" and a teacher with multiple sections would see the section number as well: "HUMAN 100 (Y1) - Introduction to the Arts (FA19)" or " HUMAN 100 (V1) - Introduction to the Arts (FA19)." The short course code for both is "HUMAN 100" and that's what displays in the To Do list.
Theoretically, we could modify the short course code to be "HUMAN 100-Y1" or "HUMAN 100-V1." It would then appear to each student that way as well, rather than just the instructor. That's the big question is whether to crowd what the many students see so that the single faculty can benefit? Part of the design criterion of Canvas is to keep it simple and uncluttered.
This is what you're experiencing in the To Do list. Canvas is showing the course code, rather than the course title. It might be a good idea to show both, but then it gets more cluttered.
In other places, they have changed from using the course code to using the course title. Even then, some really long course titles get cut off.
For you, it would be nice if the title were shown in the To Do list. For most users (students) it would not. Still, it's a design issue that the institution has to decide what to do about.
I've got some ideas about things that can be done, but we're supposed to be 16 minutes away in 8 minutes so I don't have time to go into them right now. I'll have to get back to you later. It'd be nicer if I could type faster.
