When the courses in my account were created, the end dates were set to be May 3rd, before the final exams even start. So we manually changed all of the end dates of the courses that came our way in Course Details. Now we are concerned that we may not have caught them all. Is there a way that I can somehow get a report on the end dates of all courses (preferably published courses but I will take what I can get) rather than clicking on the courses one by one?

You can generate a Provisioning Report (information on generating account-level reports is here: How do I view reports for an account?). If you generate a provisioning report for courses, one of the columns in the report is "End Date". You can filter or sort the end dates using Excel or Google Sheets to see if you missed any.

You can also update course end dates using SIS Import, if you have too many to fix manually. We had to do this for a couple of semesters until we figured out how to make Canvas stop changing our SIS-generated dates to the day before the term ended. I can dig through my archives for the details if you need them. If I recall, I took the results from the provisioning report and changed some of the fields and labels (and, of course, updated the end date) and brought it back in.
That makes a lot of sense! I can't find how to bring it back in. Do you upload the csv file somehow?

Just to add to @tdelillo 's post, creating an SIS CSV upload will only work if your courses have SIS IDs. If they were manually created courses, you'll either have to use the API to set a new end date or you'll have to go and add an SIS ID to each course.
