Hello all,
Is it possible for the instructor to replace a file that a student has submitted for an assignment manually with another one? e.g. if a student accidentally uploads the incorrect PDF and then emails you the correct file? I am new to Canvas and cannot find a way of doing this.

From my knowledge, no....but here are possible work arounds. I too would like the ability to do this, as sometimes technology issues are hard to be resolved in a full online environment.
1) Sign in as the student, if you have the ability to, and submit or resubmit the correct file.
OR
2) Attach the correct file to the comment section in the speedgrader. This is my prefered method.

In addition to the information that you received from @colona2, I would suggest that the student just re-submit the assignment to you. As an instructor, you always have access to all submissions...which are always time and date stamped. Students can only see their most recent submission, but you as the instructor can view all submissions from a student for a given assignment submission. Please check out How do I view the details of a submission for a st... - Canvas Community. Specifically, scroll about half-way down to the section on "Evaluate Multiple Submissions" to see how you can toggle through multiple submissions to the same assignment for a student.

Hi, thanks for the response. How do they resubmit it if it is a timed exam (with submission cut-off) for example, and they discover later they have uploaded the wrong exam?

It may depend on how you have the timed exam set up in your course. Is the timed exam set up as a quiz via the "Quizzes" button? Or, is the timed exam set up as a regular assignment? It is not possible to submit on behalf of a student. The suggestion to ask the student to attach as a comment is feasible, however I then find it leads to a lot of students submitting as comments, sometimes weeks later -- my policy is it should be submitted "properly" in order to be assessed and comments are only to be used for clarifications.
There is the option to adjust due dates for single students; this has been my workaround for late submissions (especially in the situation mentioned with a timed exam) where I give students a certain timeframe to upload their new document. This can be set up on the assignment page.
