Every time I update my Canvas shell, it sends a notification to the enrolled students. Is there a way to stop that?

Has the course actually started yet? If not, you may want to set the course to "Unpublished", then publish when you are finished with your content and are ready for students to see it.
For courses and areas that have been published and are available to students, it is up to the individual student to decide whether they want to receive notifications about new content that is available to them. (There's a description of the notification options that students have athttps://community.canvaslms.com/docs/DOC-10624-4212710344 ).

Thanks Michael. I really wish instructors had the option to make adjustments once the course has been published without the students being alerted.
I have also found that a student from a previous year cohort received a new event notification and they arn't enrolled in the course.
The notification actually referenced the course name from last year, but had this years dates in the notification.
Do you know why this occurred?
