Use Canvas API to determine when students accept course invitations?

Is there a way to use the Canvas API to get the time and date when students in a course accepted their enrollment invitations?

I see that API documentation lists an updated_at value for enrollments. I presume the updated_at date changes when the student's enrollment_state changes from "invited" to "active." I suppose any subsequent changes to the enrollment_state would change the updated_date and that would produce inaccurate results if I just want the date the invitation was accepted.

My user role is (Unit) Admin.
