[Assignments] Outlook "Loop" style feature

Problem statement:

When working on a project, the easiest way for students to demonstrate their process is by submitting multiple assignments. The problem with this is that students can become very task oriented, focusing on knocking items off the to-do list but not making connections between smaller "process" assignments and the final project.

Proposed solution:

It would be great to see a feature similar to Outlook Loop or Google Classroom that allowed instructors to create a cloud document that we could push out and that students could use to track their progress, give updates, and request feedback. This would allow instructors to create one "assignment" but also emphasize the important steps of the process. I've tried using the ePortfolio feature for this, but it's very cumbersome because it pulls ALL of the students courses. Having a course specific project updates page or an ePortfolio that is just for the course would be a great way to help instructors reach out at key moments of friction students experience during projects, and would help combat AI use because it would be a way to incentivize and monitor the work in process. (Again, I've tried using ePortfolio for this, and having students write up a "process summary" but it's not the same as getting them to link to, reflect on, and communicate about their learning/ writing process as they're going through it)
