Mark "On Paper" assignments late in the gradebook

I currently cannot find a way to mark an assignment late (or have it shaded red) manually.  If I create assignment details but collect it on paper, then I need a way to tell Canvas if the assignment was turned in late.

For those of us in specialist areas, this is a great feature to have as we have hundreds of kids that we see each week.  To be able to differentiate when something is late is important.  However, to be able to do it manually when something is turned in on paper is a great option.  I like the option of doing it manually because some students may need a different timeline than the rest of the class.
