I am able to read my announcements, but under the "Posted On" section to the right, there are no dates listed for all of my courses. Is this a setting I need to change somewhere? I don't think it would be huge issue but one of my classes has older content (random due dates listed in the body) that I know are not meant for me.

It is my experience that if there is no "Posted on" date, then that announcement was posted without using the "Delay Posting" tool. It was published when saved. I wasn't able to find any reference to this in the Canvas Guides though.
I would set future post dates or delete any announcements you do not want student to view at the start of the course. I typically set post dates for all of my announcements at the start of the semester, but I've also deleted them and just copied them over from a previous courses as the semester progresses. I didn't find either method better than the other.
