Are there ways to default hide certain site features, like past courses, overdue assignments, and grades/comments that show up on the screen?

These things overwhelm me when I try to use Canvas and make it a far more stressful to use for me. I've tried to find out how to hide these things in settings repeatedly, but I can't figure out how. Is there a way to do this?

I totally understand how overwhelming these things are. A good place to start is turning off as many notifications as possible without hampering your learning experience.

Then you can customise your Dashboard a bit to hide courses you don't need to see all of the time. here's a guide for that:
