I teach students of varying math levels and set up the course to have each module as a different subject. Within each module is lessons 1-30 and include assignments for each lesson called Worksheet A, Worksheet C, Worksheet E, Test, etc. It took hours to get it set up based on the way you can add assignments to modules. Each student is in a different module section and their assignment is to go into which lesson and worksheet they are working on and submit a text entry of what they were able to complete in class.
I finally was able to get each section to accept submissions however I am not able to see all of my assignments in the gradebook. I know for a fact some students have made submissions but it is not showing at all in the gradebook.
I have attached how each of those pages looks.
How can I set up the assignments so that I can view each assignment and their corresponding submissions. None are set for due dates but all have text submission with a point value.

You have put a lot of time into your set up. There might be a couple of reasons why they submissions are not showing:
a. I note your module doesn't have all the of the module posted, so this may (or may not) be one reason why
b. In Gradebook, have you double checked that you have selected the correct marking period/module - some set ups by admin are created in a way that you have to be in the correct period to see submissions. The image is below (accessible by clicking on Apply Filters).
