Blueprint sync - overriding enrollments/integrations

Hello!
My institution is pushing out a new Blueprint shell to be implemented SU24 term. The problem is that the SU24 courses have already been automatically created and synced to a previous blueprint, and students/professors have been enrolled to the courses already.
Our institution isn't overly familiar with Canvas, so our current plan is to manually un-associate all of the already created courses with the old blueprint, then I will go in and manually associate all the same courses with my new blueprint. The professors largely haven't started building their own content into the SU24 courses yet, so our main concern isn't that. I know the modules, etc. would be overridden.
1. Would doing that manually un-associating and re-associating with the new course override the student enrollments that fed over from the integration? I don't want to mess up that process.
2. Is there a better way to do this?
Any help is appreciated.
