Why are there different "assignment" columns in my gradebook? There are five separate columns.

Those all relate to assignment groups that you have set up on your "Assignments" index page.
You can use assignment groups for things like weighting grades. For example, you might have the following:
Then, you would put the related assignments in those groups.
However, if you weren't weighting your assignments in the course, you could put all the assignments into one "Assignments" group, and then delete all the other "Assignments" assignment groups that you see on that Assignments index page. Or, you could still set up assignment groups (like Quizzes, Essays, etc.) and not weight the grades. This would just be a way to organize the assignments in your course.
