Hello gina.m.miserendino Welcome to the Canvas Community.  Thank you for posting your question.  When you create a graded assignment, a graded quiz, or a graded discussion, you'll edit the content of that discussion and then follow the information in this Guide: What is the difference between assignment due dates and availability dates?.  For example, here is how you can set due dates for a quiz: How do I make a quiz available before or after the due date?

Once you are comfortable with setting due dates, you might want to check out a "Canvancement" (Canvas Enhancement) that was developed by  @James ‌ called https://community.canvaslms.com/docs/DOC-8585-adjust-all-assignment-dates-on-one-page which utilizes a Google spreadsheet.  James provides detailed instructions and short video tutorials to walk you through the whole process.
