I am trying to create custom calendars for my students depending on the enrollment date and i was wondering if i could do so through Graphiql, Canvas API or CSV.

I am not sure of an answer for you, but I wanted to let you know that I have shared your question with the Canvas Developers‌ group here in the Community in hopes that your question will get some additional exposure here in the Community.  If you are not yet following this group, please use the link that I have provided, and then you will see two buttons at the top right corner of the screen to click on: "Follow" and "Actions".  Click on both of them.  When you click on "Actions", select "Join group".  I hope this will be of help to you.  Good luck!
