I am taking classes from both LACC and ELAC. Both are online courses, obviously. Will I find both classes on one canvas account even though they are from different schools?

Most likely, no, as the schools will have different authentication methods for their students requiring access to separate URLs with credentials maintained by each school separately. The exception is when different institutions have entered into a trust relationship*. When such a relationship is in place, courses from different schools can be consolidated on a single dashboard, so check with your local district Canvas admin to see if there is such an arrangement in place.

*A trust relationship allows one Canvas account to trust another Canvas account and allows users to be enrolled in both places.
