I have lost a page and its content by removing its link - can I recover it?

Welcome to the Community,  @martindeal  .  Did you check under Pages to make sure it was still there?  It should be, even if the link to it was deleted.  If not, go to the top of the address bar in that course.  Type /undelete AFTER the course number.  This works most of the time, but not always.  Best of luck!

That does bring us back to a restore screen with the elements ready to be

selected. If I press restores individually - will it reconfigure the page

as was?

Yes, it should restore it as it was.  However, there are sometimes issues since this function isn't truly supported by Canvas.
