Yes, depending on the question types that are in your existing quiz, you can do this. There are two version of quizzes in Canvas: Classic Quizzes and New Quizzes. Both version offer a variety of question types such as multiple choice, multiple answer, true/false, numeric, fill-in-the-blank, etc. You can learn more about these two types of quizzes here:
