If I create a group assignment and click the button to "Assign Grades to Each Student Individually," does that mean each student can submit the assignment separately? Or will that be messed up when each group member submits?
Yes, it's an assignment they are working on as a group, however, they each do their own piece of it and I want them to highlight their portion and submit it individually.
I assume they can because if that box is checked, anyone who doesn't submit shows the assignment as "missing."
Do I just need to change this from a "group" assignment to an "individual" assignment?

While each student can submit, it is not separate. Each submission would just count as a new submission for the group. If they clearly identify in the document whose submission it is, you could still use it like this. The other option would be to have it as an individual assignment (as you mention). That is probably the least confusing for all parties.
