[ARCHIVED] Protecting Student PII - anonymizing student data on TEST and BETA

I am tasked with ensuring our systems comply with privacy policies at our organization. Our SIS, CRM, and marketing systems are configured such that real PII is not copied into the test environments of those systems. Canvas routinely copies student names and emails from PROD to TEST and BETA.

How do schools address this? Are there options or features for our accounts that could change the way that this data copy occurs to obfuscate/anonymize student names and email addresses?

To make sure we can use the test and acceptance environments of our SIS and IDP  (that contain dummy users) with Canvas, we use 3 different instances of Canvas. These instances all come with their own .beta and .test instances. So in total we have 9 Canvas environments. 

I don`t think you can disable the .test and .beta environments that Instructure provides, as these are for testing Canvas, not your integrations with other systems. I might be wrong about this though.
