In Google Classroom you can assign a google doc/slide and make a copy to each student. You can then view those assignments in Google Classroom in real time. The teacher can also make individual comments on a students work in real time and see their edits in real time.
Is this possible in Canvas?

Canvas does not really have functionality that supports real-time interaction between student, assignment and teacher. You can assign work to all students, some students or just a single student; but you can only view and comment on their work after they have submitted to an assignment.
I would strongly suggest reviewing the Assignments Chapter of the Canvas Instructor Guide for a complete understanding of what you can do with assignments in Canvas.This Assignments Overview Video can also be quite helpful.
