Hi, when im signe in to canvas with an incorret gmail what can i do do edit my name?

This might be a question you're going to need to ask folks at your school.  For example, try reaching out to their Online Learning / eLearning / Distance Learning team.  They may be able to help change your e-mail address for you...as this might not be something you can do on your own.  Hopefully you'll be able to get in touch with someone soon, though.
