Hi @rmoore1 Have you created an assignment for the take-home quiz? Doing so will create a column in the grade book where you can type in grades. When our faculty give quizzes like this I suggest that they create an actual "assignment" and indicate that the assignment is submitted "on paper" (see How do I add or edit details in an assignment?). Creating an assignment this way instead of a "quiz" allows you to determine the point value of the work independent of the number of questions, which is how a quiz is Canvas is set up.
Once the assignment is created and published, you should be able to go to the Grades tab and type in the student scores, or do the same though SpeedGrader (see How do I get to SpeedGrader from an assignment, quiz, or graded discussion?).
