Hi cbraithwaite2 Welcome to the Canvas Community.  Thank you for posting your question.  The mute/unmute terminology no longer exists and has been replaced with a Grade Posting Policy in the newest version of the Gradebook.  This first Guide, How do I select a grade posting policy for a course in the Gradebook?, applies to the course as a whole.  On the other hand, this Guide, How do I select a grade posting policy for an assignment in the Gradebook?, will help for your question.  Finally, these two additional Guides might have some other hints for you:
