how do I combine two classes into one class so that I have only one grade book for both classes?

What you are looking for is to cross-list sections, there is a document called How do I cross-list a section in a course as an instructor?‌  

This is a feature that requires permission so if you don't have all the options outlined then your institution is restricting this access.  If that is the case then it would be best to reach out to your technology department or click on "Help" then "Report a Problem".
