I just need to know how to turn in an assignment using windows 365 I can send it in using word or as a DOC, or DOCX.?

You will want to contact the teacher to verify how they set up the assignment.  It's possible for them to have integrated a way for you to submit a document directly from your OneDrive account, or they might just want you to upload a document from your computer or device.  On rare occasions, they might even have you enter the content as text.
