I am uploading videos from Youtube (my own lectures) for students to view during asynchronous instruction course. Is there a way I can see if they viewed it? Is there a feature on Canvas that tells which students have viewed the video?

Yup...there sure is, but it's a paid add-on to Canvas called Studio. One of the features of Studio is called "insights". Here's a Guide that shows how this works: How do I view user insights and analytics for media in Canvas Studio?.
