I am looking for a way for students to click and drag images to represent a pictograph and/or being able to match images with values. Ideas? Ideally, the New Quizzes question types Category and Matching would allow images for answer choices, but they do not.

There's nothing in New Quizzes that would let you click and drag images (in your case, pie charts) to the columns within your table. However, what you could do is to create a stimulus question with information about the six pie charts. You'd want to maybe label each of these charts with either a number or letter (A-F or 1-6). Then, you could create three multiple choice questions that each have multiple answers. List all the choices for each of the three questions, and then your students will have to select which letters (or numbers) are correct for each question. If you added the questions to a stimulus, then students would see everything altogether. I suppose you could also (or alternatively) just create three multiple answer questions with the images embedded directly in the answer options (without the stimulus) and then students would still have to select the correct responses.

@ayergin Unfortunately as you have discovered, the ability to add images to matching questions isn't current available in Canvas quizzes (New or Classic). An idea about this has already been contributed to Canvas Ideas and you may want to contribute your opinion to it. [New Quizzes] New Quizzes - include pictures in Matching and Categorization
I have a similar request. I work with a nursing college and would like to be able to create matching items where recorded media (audio files) could be tagged to images and played, then matched to their corresponding conditions. As an example, we have content that covers respiratory sounds to common conditions like various types of coughing (like pertussis or stridor), wheezing, or stethoscope sounds and would like to create assessments that match or categorize.
I've become creative with one approach that involved using the New Quizzes "Ordering" question type because it allows the rich content editor (RCE) to create ordered items, but it isn't ideal.
Is there any way that the "Categorization" or "Matching" type questions could be upgraded to include the RCE access input for editing input on "category description" / "question" / "answer" item components? This would allow the ability to input images or audio.
