Canvas works quite well on an iPad's native browser (Safari); I just had occasion to navigate through some courses on my iPad, and the experience was great. Teachers can also download the Canvas Teacher app for iOS, and students can similarly use Canvas Student. It's important to make sure that the devices are running supported OS and browsers (What are the browser and computer requirements for Canvas?)

Actually, all users need to be aware that the iPad and iPhone is limited regarding new quizzes item banks. It is not possible in chrome or Safari to navigate pages of item banks. This has been confirmed by Instructure support. The response was that mobile is not supported.
Fortunately, the edge browser on the iPad and iPhone works in new quizzes and item bank navigation is fine.
