Fill out a Canvas help desk ticket.  We had the same issue in my district and Canvas support had to reset something in the background and once they did that then everything was fine.

It all depends on the permissions that were created for the Co-Teacher Roll.  When the co-Teacher roll was created there could be some permissions that were not turned on, such as grading, adding, edi...
