After weeks of digging around and looking for options, I realised that the "old" type quizzes offer an option to create an Ungraded Survey and that the "Multiple Dropdown" questioning ...

    I would like to make use of scaled questions in quizzes.  Currently, Numeric questions offer a workaround for such questions, but these do not appear as slick as in the image example provided.
