I watched the video, and she does precisely what I do, but my students can STILL see points in their grade view. I have a three-tier grading scheme (top picture), but Canvas still shows the points first in the student grade view. My grading scheme is in parenthesis after the points (bottom picture). I emailed the Mesa SD instructor to ask her about this but have gotten no reply.

No, I did not find an answer to my question. As was made clear, Canvas removed the ability to link to course elements within the quiz function. Marking something as "solved" when it most emphatically is NOT solved is disingenuous.

Why have we lost the ability to link to course material in the New Quiz format? I want to be able to add, "Please check the assignment guidelines before you answer the questions in this quiz," along with a link to those guidelines. We're trying to make navigation through a course as easy and intuitive as possible, right? The Classic Quiz link icon in the Rich Content Editor allows you to choose "Course Link" or "External Link." As my attached screenshot shows, Canvas has specifically and knowingly disallowed course links in the New Quiz RCE. Why?

Has there been any movement on this issue? I too don't want to be notified when a student submits. I want to see all the work that needs to be graded when I sit down to grade a class.

I agree! It's frustrating to have different grading options and opportunities for different types of assignments. If I have a policy of asking students to redo work to improve, it doesn't help if some of those assignments will show up in their to-do list but others won't.

I sure haven't. I've been wrestling with this for years. I created my own grading scheme, but since it is still based on percentages, that's what studenst focus on. I'd switched to complete/incomplete grades, but can't do that for quizzes and surveys at all. It's frustrating to want to improve your class and break the cycle of working for a grade only to be thwarted by Canvas itself.

Unfortunately, quizzes and surveys can not be set to complete/incomplete, as far as I can see. Canvas really needs to address the rise in contract or labor-based grading practices and allow for more flexibility in the way grades are recorded.
My college requires that we use the Canvas gradebook, so even if creating my own alternative was workable, I have no option to create my own grade reporting system.

I have to agree. I used custom colors in my gradebook when we used Blackboard, and I could assess a student's progress instantly, as well as get a good snapshot of the class as a whole. Red marked missing assignments (grade of 0.) Yellow flagged assignments that were below a passing grade. Green marked assignments where a revision had been submitted. Much easier and clearer than pale pink and pale orange!
