I had this same issue. It ends up that the link I had was a Microsoft Teams Meeting. Buried in the description of the event was a Zoom meeting link, which got me to the event (10 minutes late).
From the Courses page, when I need to check on the course enrollments, I have to click the course name or the cog wheel to get into the course, then locate and click the People link on the left nav.

The easiest way is to create a .csv file that can be imported into Canvas, using the Admin SIS Import tool.
