This option is one of several screw-ups in the Canvas quiz. Those checkboxes should be radio buttons, as the two options do not work together. If you select the option "Only once after each attempt", the other checkbox for "Let students see the correct answers" has the date window greyed out. There is no way to have the students view their answers only once after a given date. All you can really do is to have the students view their responses and the key, immediately, which is terrible because technically a student could share the key with the rest of the class. Or set a date window in which the students can view the answers and the key, which is the only sensible option.

Case in point: Fill-in multiple blanks questions.
In Blackboard, you can specify whether you want the answer to be matched as:
Exact match
Contains part of the correct answer
Matches a pattern that you specify
In Canvas, not a chance!
So, Imagine that an instructor wants to create a question about a confidence interval in a quiz. The first idea is to create a multiple-numerical answers question, but that would be too easy, right? Of course, there is no such question type available (to be fair, neither there is in Blackboard.)
So, the next best thing is to set it up as a fill-in multiple blanks question. Only, Canvas makes it soooo much harder than Blackboard, because unless you are incredibly strict about the allowed correct answers, you will always find some student who manages to mess it up in some unexpected way and still expect credit for it. Then, good luck with 'fudge'.
Fudge! Really, Canvas?
At least Blackboard allows for correct answers so long as they contain a certain string of characters, which works great for rounding issues.
But Canvas? Maybe we will get an improvement when hell freezes over because all the developers have managed so far is to come up with the brilliant idea of New Quizzes, which is a brand new exercise in the logic of regress to a worse version than it was with Classic Quizzes.

To prove one more time how abysmal Canvas is an LMS, let it be noted that nothing has been done in five years about expanding the question types that allow for quiz regrading.
So, if you teach a class of 100 students, and need to regrade the quiz score after having modified the key for one fill-in-the-blanks or numerical answer question, you are pretty much screwed.
Why Canvas even is such a popular LMS is beyond my comprehension, as it is managed by incompetents who understand nothing about instructor's needs and care about them even less.
The fact there is even an utterly useless Community forum is a testament to the futility of this product.

Yes, I have an assignment set to Highest Attempt and unlimited attempts, so that a student can keep practicing on it for the remainder of the course past the due date.
However, regardless of whether a past due date new attempt has a higher score or not of the Highest Attempt obtained within the due date, Canvas still dings the assignment score, as per the late policy.
This is contrary to what's stated in the shared document.

I have just finished a chat with an annoyed customer service representative who tried to convince me that this is the correct way to implement it.
I agree with you that to penalize the overall assignment for an attempt submitted late on a score already earned on a previous attempt submitted within the deadline is stupid.
But Canvas seems particularly obtuse about this because it will be a long day in hell when the developers listen to anything discussed on this community forum.

I am surprised nobody replied to this post. Canvas Discussion Board is grossly underdeveloped, like many features in Canvas. For example, Blackboard allows setting different deadlines for posting on a discussion board and for replying to a post. Blackboard also allows an instructor to view contributions to a discussion board by each student making it easier to grade. I have not found a way to do so yet.
Why are the different deadlines important? It is typical in many online courses, especially asynchronous ones, that instructors grade students for posting on a topic, and then for commenting on other students' posts. Only, so many students play it close to the wire, leaving no room for other students to comment on their posts. By setting different deadlines, such as Friday at midnight to post, and Sunday at midnight to reply to other posts, leaves ample time for each student to view and comment on every other student's contribution.
Truth is, Canvas has distinguished itself mainly for:
1. An excellent and very aggressive sales unit.
2. An almost non-existent feature development unit.

Late policies work only on assignments submitted directly on Canvas, but don't work on assignment scores synced via LMS external tools. This seriously limits Canvas capability to manage courses with assignments linked through an LMS. You should add that feature, but given how static Canvas developers have added needed features these past few years, I won't hold my breath for that.

Someone may have flagged this question as solved, but what remains unsolved is Canvas unwillingness to keep developing its product. With Blackboard at least the company was receptive to improvement. Canvas is a great LMS, but what you see is what you get.
