My Institution is running a limited canvas pilot for a small subsection of our classes. I am one of the administrators.
I'm interested in somehow accessing the info presented in paginated screens from
Canvas > Admin > Courses
into a flat file so I can more rapidly see the contents of this data set. (I'm thinking of a flat file somewhere). This is just an example of some of the things I'll need to do to support staff and faculty at my institution.
I have also created a new user role but I don't seem to be able to assign this new role to my account. Also none of the current admins at my institution have this role either.
Can someone point me to a guide, or a person to contact regarding this?

While I have never used it, have you considered Canvas Data Services?
As for your "Role" question, these resources should help you differentiate between account-level and course-level roles and how to use them.
