We are considering installing UCF's UDOIT on our Canvas site. Has anyone already done this with Blackboard Ally already installed on the site? Does it create conflicts between the two systems? We asked Blackboard the same question and are waiting to hear back but wanted to know what others have experienced.

I've talked to a couple of institutions that run both Blackboard Ally and UDOIT, and they have not reported any conflicts between them. That's not surprising, since the two systems work so differently. If your institution ends up doing a pilot of Ally, you can always install a Heroku instance of UDOIT in your Canvas instance to see if there are any conflicts.

I am not sure of an answer for you on this question, but I wanted to let you know that I have shared your question with the Accessibility group here in the Community. If you are not following this group, you can use the link that I have provided, and then you'll see two buttons at the top right corner of the screen to click on: "Follow" and "Actions" >> "Join group".
