We have a number of faculty on our campus who use Excel in tandem with Canvas to manage various aspects of their courses. Our old LMS, Brightspace, had a one-click option to export a list of students and their email addresses. Canvas doesn't seem to have that, and I'd like to suggest it as an idea. I know it has been brought up many times in the Community to no avail:
Many of the solutions involve Admin-level workarounds or coding hacks that are well beyond the capability of most of our faculty. I'm a Canvas Admin and I get this question all the time, and it's more than a little frustrating that Canvas can't perform what seems like such a simple task.

Do you use New Analytics in your Canvas courses? If so, you can get a list of students and their e-mail addresses from there. How do I view and download reports in New Analytic... - Canvas Community You will want to run the "Class Roster" report that is available on the "Reports" tab. This should get you the information you are looking for.

You might need to reach out to your Canvas administrator to get this information if you cannot get it yourself in Canvas. Or, see what your school's policy is on obtaining this information. Someone should be able to let you know if you'll be able to get the e-mail addresses you're looking for. Sorry I cannot be of more help, but I think a conversation with folks at your school would be best. Good luck!

I'm sorry that you feel that way. However, this is the best solution I can offer at this time. Obtaining the information you're looking for might be limited be because of permissions that have been set by your Canvas administrator(s) or people on your school's Online Learning / eLearning / Distance Education team. Since the vast majority of users here in the Community don't have access to your school's Canvas environment or any of their courses, it's hard to know what policies are in place to get this information. Thus, speaking with folks at your school is the best route to take.

If I understand your question. You need student information from a course you are not involved with teaching wise. If so, can you ask your colleague who is teaching the course to do it for you based on what was discussed above?
Another option that may work(once again I am not sure I completely understand the way things are set up for you) is to use a chrome extension called CanvasCape (I have nothing to do with this extension and rely on google to vet the extension) there is an option in that extension to export information along the lines of what you want - you must be the teacher for the course inorder to use CanvasCape.
