I think you may have a slight misunderstanding of how the color overlays work as it relates to your course cards on the Canvas Dashboard. When you are logged into your course, on the course "Settings" page, that is where you can select an image of your choice for the course. This image is then displayed on the course card for you and your students on the Canvas Dashboard.

Then, using either of the two Guides which I linked to back in 2018 (updated links are below), scroll to the bottom of each Guide, and look for the sections on View Color Overlay and Remove Color Overlay. The image under the View Color Overlay heading shows that you can toggle the Color Overlay option on or off. If you turn it off, this will remove the color overlay that is over the image you added via your course "Settings" page. You cannot remove the color overlay within the course itself...this is only a function that you can toggle on the course card. Students would also be able to toggle the color overlay on/off if they wanted.
On a side note, if you think that anything in the above Guides are unclear, you can suggest improvements to the Guides for the Documentation Team.
